The last few weeks have been crazy busy, which unfortunately means I have been eating out/grabbing take out far too often and not grocery shopping, meal prepping, and cooking at home as much as I would have liked. This week I needed to get back on track and I dragged myself to Whole Foods after work Monday night to get everything I would need for the rest of this week.
This week’s shopping list:
Elemental Superfood Bars
Califia Farms Almond Milk
Whole Foods 265 Crunchy Peanut Butter
Blue Bottle Coldbrew
Siggis Skyr Yogurts (2% and 4% assorted flavors)
Organic Girl Mixed Greens
La Croix Sparkling Water

For breakfast this week I will be enjoying Peanut Butter & Jelly Smoothies on the go! I prep my smoothie either at night or first thing in the morning before heading to yoga and/or to lift. To make this smoothie:
Add one scoop Quest Peanut Butter powder to blender
Add Califia Farms Almond Milk (about 6 oz. but I never measure it)
Add ½ banana
Add ½ cup frozen blueberries
Add 1 tsb. Whole Foods 365 Crunch Peanut Butter
Add chia and/or flax seeds to your liking
Blend & Enjoy!
For lunch this week I have been on a salad kick, using some of my favorite Sweetgreen salad ingredients and combinations for my inspiration. My trick with salads is to pre-chop all ingredients, but keep ingredients all in separate containers in the fridge until the night before/morning of to keep the ingredients fresh and from getting soggy. I have been using my re-usable Just Salad salad bowl to mix all ingredients the day of, the lid stays tight and it’s the perfect size for a healthy and filling lunch. My salad ingredients this week are: (1) Organic Girl Mixed Greens; (2) Roasted Sweet Potatoes; (3) Feta Cheese; (4) Roasted Cauliflower; (5) Cherry Tomatoes; (6) Cucumber; (7) Rotisserie Chicken; and (8) Balsamic Vinegar. To make this salad:
Chop all ingredients
After chopping all ingredients, place them in a container/bowl
Add in Balsamic vinegar (or dressing of your choice)
Toss salad or lock a lid onto the container and shake until well mixed (if you plan to eat the salad an hour or more after adding ingredients to the container, do not add in the dressing until you’re ready to eat).

As you can see I have been obsessed with GT’s Komucha, La Croix Sparking Water, Perfect Bars, and Blue Bottle Cold Brew recently. I have started to keep these items both in my fridge at home and in the office at (almost) all times.
