I love late fall. I love the colors, the smells, the holidays and everything that comes along with it. One thing I have learned over the years is that I hate feeling like I am missing out of the season and the celebrations due to any dietary restrictions or any diets I may be on. This year I have promised myself that I will enjoy every last drop of what the fall and the holidays have to offer, and that in exchange I will keep my eating on point the rest of the month so that I can indulge 100% guilt free. Using this motivation I brought home a massive Whole Foods haul this past weekend and spent a few hours prepping all my weekday meals so that I would have no excuses and fresh & healthy food ready to go each and every workday.
This week’s shopping list:
Whole fresh eggs
100 Calories Whole Wheat Tortillas
Aloutte Natural Crumbled Feta Cheese
Organic Girl Arugula
Organic Girl Supergreens
Fresh Red & Green Peppers
Diced Red Beets
Organic Shredded Carrots

Balsamic Vinegar (or salad dressing of your choice)
This week’s meal prep:
For breakfast this week I will be enjoying healthy breakfast wraps on the go! I pre-made all of these wraps, wrapped them in aluminum foil, and tossed them in the freezer. Each can easily be toasted or microwaved when you are ready to enjoy!
For lunch this week I am still on this salad kick. My trick with salads is to pre-chop all ingredients, but keep ingredients all in separate containers in the fridge until the night before/morning of to keep the ingredients fresh and from getting soggy. I have been using my re-usable Just Salad salad bowl to mix all ingredients the day of, the lid stays tight and it’s the perfect size for a healthy and filling lunch. My salad ingredients this week are: (1) Organic Girl Supergreens; (2) Organic Girl Arugula; (3) Feta Cheese; (4) Shredded Carrots; (5); (6) Cucumber; (7) Rotisserie Chicken; (8) Diced Beets; (9) Diced Fresh Peppers; and (10) Balsamic Vinegar. To make this salad:
Chop all ingredients
After chopping all ingredients, place them in a container/bowl
Add in Balsamic vinegar (or dressing of your choice)
Toss salad or lock a lid onto the container and shake until well mixed (if you plan to eat the salad an hour or more after adding ingredients to the container, do not add in the dressing until you’re ready to eat).
Eat & enjoy!
